The Scottish Agricultural College carried out tests on Pure Highland Beef, and they identified some amazing results!  

Grass-fed beef has up to four times more beta-carotene than conventional feedlot meat!

Beta-carotene is an important antioxidant. It is the only carotene that can be converted into vitamin A by the body. Consumed 3 times a week by most Australians, red meat plays an important role in the Australian diet - it is the largest contributor of readily available iron and zinc and the second-largest contributor of omega-3, after fish. Hormone and Antibiotic free, our cattle thrive in a quiet idyllic setting of green grassy paddocks amongst natural native woodlands.

Highland Cattle are generally accepted to mature into high quality carcasses, with little surface fat and high amounts of fine marbling through the meat. The meat is succulent and tender and this is because Highland Cattle are slow maturing, unlike other mainstream “Commercial” breeds. Quality takes time! Ennerdale Highland Cattle are naturally fed on Native Grasses which contain almost double the amount of beneficial Omega-3 fatty acids when compared to grain fed Cattle which contain (on average 80%) less beneficial Omega-6 fatty acids.

This is not always the case with commercial cattle. The Highland's shaggy coats and thick hides mean, unlike other cattle breeds, little fat is required to insulate under the skin. The fat is present as marbling, ensuring enhanced flavour and moisture during cooking. Additionally, Highland Cattle generally provide around a 60% bone out ratio providing additional returns to the farmer.

Expect quality service

  • We personally transport the cattle direct, quickly and quietly for the least amount of stress to our local abattoir.

  • The beef is cut to your requirements - how thick or thin you like your T-Bones!
  • Beef is packaged on trays and labelled

  • As well as your premium cuts like rib eye and fillet steaks, the butcher can make corned silver-side roasts, mince and sausages.
  • The beef is ready for collection from the butcher shop. Home delivery is also available if within a reasonable distance from the farm.

The whole procedure is within the guidelines of the Australian Meat Standards.

We sell our highland beef in quarters, halves or a whole carcase.  We can also ship a full carcase to your butcher; prior arrangements will need to be clarified before this option is available

Meat can be frozen for up to a year, as long as it is well packaged and keep the same constant temperature.  We found as a family of four in combination with other proteins, a full beast would last a year.

Once orders are taken, the customer is notified throughout the process. Quarters weight approx. 50-65 kg before boning out.
